This process not only preserves the properties of ancient grains, but also enhances their authentic flavour. A further advantage of our artisanal method is natural drying, a crucial step that ensures the superior quality of our pasta.

Unlike the high temperatures used in industrial production, which can lead to the formation of furosine—an indicator of protein deterioration and loss of nutritional quality—our pasta is dried naturally for approximately three to four hours in a controlled environment, preserving its nutritional properties.
